Chop your vegetables into bite size pieces.
Mix your dressing in a canning jar or your favorite mixing bowl.
Combine all of your ingredients and let marinate in the fridge over night to let all the flavors blend.
Prep Time: 15 minutes
3 medium cucumbers, sliced 1/4 inch thick
1 medium red onion, sliced and separated
1 lb. grape or cherry tomatoes (about 50), cut in half
1/2 C. red wine vinegar
1/4 C. sugar
1 C. water
2 tsp. salt
1 tsp. pepper
1/4 C. oil
What to do:
Place all your chopped vegetables in a large bowl. Mix your dressing ingredients (vinegar, sugar, water, salt, pepper and oil) in a canning jar or your favorite mixing bowl. Combine the vegetables with the dressing and refrigerate at least 2 hours, over night is even better, then serve.
