Prep Time: 15 minutes
Serves: 4-6
Ingredients:
3 large cucumbers
1 tsp. coarse sea salt
1 tsp. Pepper, coarsely ground
1 1/2 C. sour cream
1/4 finely chopped red onion
1/4 C. fresh dill, chopped
1/4 C. fresh parsley, chopped
2 T. white wine vinegar
1/2 tsp. sugar
What to do:
Peel your cucumber – or you can leave the peel on if you want.
Slice cucumber into fairly thin slices. Place into a colander and sprinkle with coarse sea salt. Set on something to catch the water that drains off, and set aside for at least an hour. This will get most of your moister out of the cucumber so your dressing won’t be so runny. No one likes runny dressing, ewwwww.
Mix together sour cream, onion, dill, parsley, vinegar, and sugar. Cover and place in fridge.
Once you think the cucumbers are ready and just before serving, mix the cucumbers and dill mix together and enjoy!!!!
