Ingredients:
1/4 C. olive oil
1 onion, diced
3 cloves garlic, minced
2 large carrots, peeled and finely diced
1 bay leaf
2 cans (28 oz. each) diced tomatoes with juice
1/2 teaspoon salt
1/2 teaspoon black pepper
2 T. minced fresh oregano (dried herbs will work just fine also)
2 T. minced fresh or dried parsley, plus more for garnish
3 T. tomato paste
Fresh parmesan cheese, for garnish
What to do:
Add the onions, garlic, carrots and bay leaf in a medium size sauce pan with the heated oil and cook for 4 to 5 minutes, stirring occasionally. Pour in your tomatoes and then mix in the salt, pepper, sugar, oregano (or other dried or fresh herbs) and tomato paste. Reduce the heat to low and simmer, uncovered, for 1 1/2 hours, stirring occasionally. Keep cooking if your desired consistency isn’t to your liking.
