Serves: 20 with a 1, 1/2 inch scoop
1/2 C. water
3 T. oil
1 package devil’s food cake mix (regular size)
1/4 C. all purpose flour
2 C. (12 ounces) semisweet chocolate chips
1/4 C. butter flavored shortening (regular will do also)
1 tsp. peppermint extract
Crushed candy cane
What to do:
Preheat oven to 350°.
Spray cooking spray on two cookie sheets, set aside.
In a large bowl add egg, water, oil, cake mix and then flour; mix well. Place 1 inch apart on greased baking sheets. (they don’t spread much at all) Bake 12-14 minutes (ovens very) or until firm. Remove from pans to wire racks to cool completely.
Place chocolate chips and shorting in a medium size microwave bowl. Place bowl in microwave for 30-second intervals until melted (stirring in-between intervals). Stir in extract. Spread cookies with chocolate mixture. Place on waxed paper-lined baking sheets. Decorate with crushed candy cane. Refrigerate until set.
