Whoa, if you’re into mint and chocolate brownies, you’ve gotta try this! It’s like the ultimate treat in our house. Seriously, my kiddo has been scarfing these down since, well, forever! And the best part? It’s a total breeze to make. Grab a boxed brownie mix, toss in a handful of ingredients, and boom – you’ve got yourself some wickedly good dessert that’s ready in no time. Trust me, your taste buds will thank you!
Prep Time: 10 minutes
Cook Time: 20-30 (9×13 pan) and depending on your brownie preference.
30-40 minutes if using an 9×9, 8×8 and how gooey you like them.

Ingredients:
1 box of your favorite brownie mix, or to make your own, click on this link www.cooknwithmrsg.com
Make your brownie according to the directions on the back of the box and in a 9×13, 8×8, or 9×9 cake pan, let cool completely.
For the Buttercream:
1/2 C. butter, at room temperature
4 oz. cream cheese, at room temperature
1 to 2 drops of green food coloring, this will depend on how dark you want your green to be
2 tsp. peppermint extract
Pinch of salt
3 1/2 C. powdered sugar
What to do for the buttercream filling:
Using an electric mixer, beat the butter and cream cheese on medium speed until smooth and fluffy, about 2 minutes. Reduce the mixer speed to low and add the food coloring, peppermint extract, and a pinch of salt, blending until totally combined. Keeping the mixer on low, gradually add the powdered sugar. Once it has all been incorporated, increase the speed to medium, and beat until smooth and fluffy. Spread the mixture over the cooled brownies into an even layer. Transfer to the refrigerator and chill for at least 30 minutes.
For the chocolate glaze
1 (12 oz. or so) bag good quality dark chocolate chips
1 tsp light corn syrup
1/2 C. (1 stick) unsalted butter, softened, cut into cubes
What to do for the chocolate glaze:
Place all your ingredients in a medium-sized microwave-safe bowl. Place the bowl in the microwave for 30-second intervals until melted, stirring between intervals.
Once the peppermint layer has hardened somewhat, place a layer of the chocolate topping. Let harden for 15-30 minutes (you can also put them in the fridge) so they can harden up faster. Cut into squares…Enjoy!
