1/2 C. sour cream
1/2 C. mayonnaise
1/4 C. sugar or honey
Salt and pepper to taste
1 T. apple cider vinegar
4 C. frozen or fresh green peas, thawed
8 slices of cooked bacon chopped
1/2 C. red onion
1/2 C. white cheddar or American cheese, cut into small cubes
1/2 C. mozzarella or monetary jack cheese cut into small cubes
2 T. minced fresh parsley (optional)
What to do:
Mix the sour cream, mayonnaise, sugar or honey, salt, pepper, and vinegar together to make the dressing. Add more salt and pepper to taste if needed. Stir in the peas, canon, onion, cheeses and parsley until everything is well coated. Taste and adjust seasonings. Cover with plastic wrap and refrigerate for 2 to 4 hours before serving.
Sometimes I will use shredded cheese, and it turns out just fine. Also, think about adding other items like raisins, nuts, carrots and ham…etc. you get the picture.
