1 small onion, chopped
1 lb. ground chicken, beef or turkey
1 envelope taco seasoning mix
1 tsp. garlic powder
1/2 C. water
1 (about 14 oz.) canned corn with diced peppers, (Mexican Corn) drained
1 (8 oz.) pkg. cream cheese
1 C. shredded cheddar cheese (taco blend also works well with this dish)
8 oz. egg noodles, cooked and drained
What to do:
In a medium size cooking pot, add onions and ground meat, cook until ground meat is no longer pink, drain fat. Add taco seasoning, garlic powder, water and corn to beef mixture, cook 1-2 minutes. Add cream cheese and cheddar cheese; cook until it is heated through and cheese has melted, toss with noodles.
Garnishes for this dish….avocado, olives, jalapeños, chopped tomatoes, sour cream….etc. Try to crush some corn chips or cheese corn chips on top of this dish; it will add that crunch and flavor that you’re looking for!!
