Ingredients:
1 loaf of French bread, cinnamon bread works wonderful also!
1 cup raisins (bourbon soaked optional)
4 C. eggnog
1/2 C. sugar
4 eggs
1 T. vanilla
1/4 tsp. ground nutmeg
1/2 tsp. ground cinnamon Garnish with warm maple syrup or powdered sugar
What to do:
Preheat the oven to 350 degrees
Presoak your raisins in bourbon for at least one hour, but best over night.
Prepare a 9×13 baking dish with cooking spray.
Place your cubed bread in prepare baking dish and set aside. In a large pot combine the rest of the ingredients except the raisins and vanilla, making sure to combine well. Cook over medium heat stirring consistently until butter and sugar is melted (4 to 7 minutes). Take off the stove and add in your vanilla and raisins. Pour over bread pieces and let the soaking begin, once all the bread is soaked then bake for 35-45 minutes, until the liquid has set. The pudding is done when the edges start getting a bit brown and pull away from the edge of the pan. Garnish with powdered sugar or warmed syrup.
