You can use all of these items listed below or just what you have on hand. I usually buy what’s on sale.
1-½ C. Old Bay or Zatarain’s seasoning
2 bottles of your favorite beer (optional)
3 whole medium onions with skin removed
3 whole lemons cut in half
6 whole garlic cloves, peeled
4 lb. medium sized new potatoes scrubbed and left whole
3 packages (16 0z. or so package) cooked kielbasa or smoked sausage, cut into 1 1/2- inch diagonal slices
10 ears fresh corn, husks and silks removed (cut in half)
4 lbs. crab legs, broken into pieces
4 lbs. fresh shrimp, peeled and deveined, frozen also works
5 lbs. whole frozen seasoned crawfish
36 whole middle neck Clams washed and scrubbed
36 whole mussels scrubbed washed and scrubbed, frozen also works
What to do:
We use a turkey fryer when doing large parties, fill with water just below the line so you can fit your beer and old Bay or Zatarains Seasoning. Sometimes I use two big pots if cooking this indoors or if I am camping. Also, you can split the recipe in two if you only have on big pot or just want a small quantity.
Bring your turkey fryer or pots to a full rolling boil. Add your potatoes, onions, lemons, garlic, cooked until almost done (about 10 minutes). Then add your sausage, corn, crab, shrimp, clams and mussels and cook those until they are done.
Drain the liquid and spread the boil out on a newspaper-covered picnic table. Serve with lemon wedges, melted butter, cold beer and more of the Old Bay or Zatarains Seasoning.
