Ingredients:
Leftover meatloaf, about one pound, chopped , click Family Meatloaf for my meatloaf recipe.
1-2 C. cheddar cheese, divided
1 green pepper, chopped
1 medium onion, chopped
About 1 C. of meatloaf sauce or BBQ sauce, click on Family Meatloaf for the meatloaf sauce.
6 small flour tortillas or 4 large
What to do:
Assemble the quesadilla. Lay three tortillas on a flat surface. Cover the tortillas with an even layer of cheese, making sure only to use half on the three tortillas, now the meat, onions, green peppers or the toppings of your choose and the sauce and finally the rest of the cheese and then another tortilla on top. Heat a large skillet over medium heat. Spray pan with cooking spray. Place tortilla in the skillet cook for 1 -2 minutes, until cheese starts to melt and the tortilla start to turn brown. Flip so each side is golden and crisp.
Christina’s Notes:
If you want to cook more than one, preheat oven to 350 degrees. Spray a cookie sheet with cooking spray. Once you have your filled quesadillas on your sheet spray the top of the tortilla so the top will also get browned. Keep an eye on this once in the oven. When the top starts to get brown…..flip, so that other side can get some sun also! Other ingredients you may enjoy for your quesadillas…… jalapenos, salsa, and sour cream. Oh, my!!!
