Serves: about 24, depending on the size of your tomatoes and cucumbers
Ingredients:
1 -2 pints of cherry tomatoes
1-2 small cucumbers
1-8 oz. pkg. cream cheese softened
4-6 pieces of bacon, cooked and crumbled
1/4 C. minced green onions
1/4 C. minced fresh parsley
1/4 tsp. Worcestershire sauce
What to do:
Cut a thin slice off at the bottom of the tomatoes, this will help them stand up straight. Then cut off about ¼ of the top and scoop out and discard the pulp. Cut the Cucumbers about 1 inch thick and scoop out almost to the bottom, but leaving enough so the stuffing won’t come out the other end. In a small bowl, combine cream cheese, crumbled bacon, minced green onions, minced parsley, and Worcestershire sauce. Stir until well mixed, spoon mixture into hollowed out tomatoes and cucumbers. Refrigerate for at least an hour to let the flavors blend and until serving. Garnish with extra green onion, parsley, and bacon.
