Ingredients:
3 medium cucumbers, peeled and sliced ¼ inch thick
1 medium red onion, sliced and separated into rings
1 lb. grape or cherry tomatoes, cut in half
1/2 C. red wine vinegar
1/4 C. sugar
1 C. water
2 tsp. salt
1 tsp. fresh coarse ground black pepper
1/4 C. oil
What to do:
Combine ingredients in a large bowl and mix well. Refrigerate at least 2 hours before serving so the flavors have a chance to dance.
