Serves: 8-10
Ingredients:
1 C. coarsely crushed pretzels
1 (8 oz.) package cream cheese, softened (optional) see notes
1 (12 oz.) container frozen whipped topping, thawed
1 (3.4 oz.) vanilla (or coconut cream) instant pudding mix, you will not be using milk just the mix
1 (20 oz.) can crushed pineapple, DO NOT drain
2 C. mini marshmallows
1 C. shredded sweetened coconut, optional (toasted or untoasted, whichever you desire)
1/2 C. chopped pecans
What to do:
In a medium size mixing bowl, beat cream cheese, once smooth add your whipped topping and mix until combined. In another bowl combine the vanilla pudding and your pineapple, juice and all. Now, gently fold in all the ingredients including the cream cheese mixture and the pudding mixture. Chill until ready to served. Add extra pretzels pieces before serving for that amazing crunch!!!!

Adding the cream cheese takes this dish to another level. It will add flavor and stability which is nice when taking it to the BBQ’s.
