Serves: about 1 cup
1/2 C. olive oil
1/2 C. lemon juice
1/2 tsp Dijon mustard
1 garlic clove, minced
1 T. honey or 1 teaspoon sugar (optional)
1/2 tsp. salt
1 tsp. chopped parsley, more if you wish
Zest of a half lemon, more if you wish
Whisk or shake all the ingredients in a jar or bowl until well combined, add more salt and pepper to taste. Store in the refrigerator for up to two weeks and serve over your favorite salad greens or fish.
Christina’s Notes: Some add-ins: Thyme, rosemary, red pepper flakes, parmesan cheese, poppy seeds, basil, mint, oregano, sun-dried tomatoes……etc.
