Prep Time: 20 minutes
Serves: 8-10
Ingredients:
1/3 C. packed light brown sugar
1/4 C. creamy peanut butter
1/4 C. honey
4 T. butter
1/2 tsp. cinnamon
2 C. quick oats
1/2 C. crispy rice cereal
1/2 tsp. vanilla
1/2 C. chocolate Candies
1/4 C. semisweet chocolate chips
What to do:
Combine brown sugar, peanut butter, honey, cinnamon and butter in a medium saucepan over medium-low heat, stirring frequently.
Bring sugar mixture just to a boil and then continue cooking for an additional 2-3 minutes stirring constantly or until sugar dissolves.
Take off heat, stir in vanilla, oats and crispy rice cereal until evenly coated. Let mixture cool for 5 minutes.
Place parchment paper in an 8×8 inch baking dish. Make sure the paper hangs over on either side so you can pull out the granola bars and cut them up with ease.
Once mixture has cooled slightly, fold in chocolate candies, chocolate chips and press into the prepared dish.
Sprinkle chocolate candies and chocolate chips over the top of the bars and use the bottom of a bowl or cup to press them into the bars. You don’t want them to fall out when cutting!
Place dish into refrigerator and let bars set up for 1-2 hours. Cut into bars when chilled!!!
Christina’s Notes:
For a healthier version try using 1/2 C. walnuts and 1/2 C. dried cherries, instead of the chocolate. You really can add anything your little heart desires, chopped nuts, pumpkin seeds, flax seeds, dried fruit, wheat germ, just to name a few …have fun!!!!
