Prep Time: 15 minutes
Serves: 8-10
Ingredients:
2 (8 oz.) bags slaw mix (in the bagged section of the grocery store)
2 (3 oz.) bags oriental-flavor instant ramen noodles (any flavor will work, you won’t be using the seasoning packet) or 1/2 lb. spaghetti noodles, cooked and drained
1/4 C. chopped roasted almonds
1 C. sunflower seeds
1/2 C. chopped green onions
Dressing Mix:
3/4 C. oil (whatever you have on hand)
1/4 honey
1/3 C. apple cider vinegar (white vinegar will work also)
1 tsp. sesame seed oil
What to do:
Before opening noodles, crush into 1-inch pieces. Open packages and set aside flavor packets. Add the crushed noodles and chopped almonds to a large mixing bowl. Meanwhile, whisk together all the dressing ingredients in a small bowl or Mason jar. Place the shredded Cole slaw, sunflower seeds and chopped green onion into the bowl and toss with the noodles. Pour over Cole slaw mixture, cover and chill up to 24 hours.

For a full meal add sweet peas, broccoli, and grilled chicken.
