Serves: 6-8
Ingredients:
For the Meatloaf:
1 lb. ground beef and 1 pound ground sausage (you can also use all beef or turkey if you preferred)
1 small onion or half of a larger onion, chopped
1/2 C. bread crumbs (I used Italian for extra flavor) or 1 slice bread (broken or chopped finely)
1/4 C. Parmesan cheese
1/4 C. parsley, chopped (fresh or dried)
1/4 C. milk
1 T. garlic, minced (optional)
2 eggs, beaten
1 lb. bacon
Salt and pepper
For the Glaze or for sauce on the side:
1/2 C. Ketchup
2 T. brown sugar
1 T. mustard
Dash of Worcestershire sauce
What to do:
Preheat the oven to 350 degrees.
In a large bowl, beat eggs. Add the salt, parmesan cheese, parsley and pepper. Crumble beef, sausage and onion over mixture and combine well. Shape into an 8-in. x 4-in. oval in an ungreased shallow baking pan or pat into a meat loaf on a large baking pan.Wrap loaf with the bacon.
Place the loaf in the oven and bake for about 45 minutes. At the end of the 45 minutes put the oven on Lo Broil. Continue cooking another 7-10 minutes to crisp up the bacon. Add 1/3 of the glaze after the7-10 minutes, and then cook for an additional 15 minutes or until sauce is thick and bubbly. Once the loaf is done (internal temp of the meat should be 155 degrees and/or no longer pink), remove from the oven and you can either top with the additional glaze or save it for serving, which is what I like to do.
