Ingredients:
8 large tomatoes or 8 C., chopped
1 large eggplant or 6 C., chopped
2 C. chopped onion
2 cans (6 oz. each) pitted, small black olives, chopped
1 C. 5 % red wine vinegar
1 C. packed brown sugar
2, (6 oz.) cans tomato paste
1/4 C. olive oil
1/4 C. dried parsley
2 T. dried savory
2 T. dried oregano
8 cloves of garlic, minced
1 T. salt
2 tsp. black pepper
What to do:
In a heavy stock pot combine all the ingredients. Bring to a boil and then reduce heat. Simmer uncovered for 1 to2 hours or until desired thickness. Serve over rice, buttery mashed potatoes or noodles…..Enjoy!!!
