Ingredients:
1 (32 oz. or so) bag Crinkle Cut Fries
4 T. olive oil, split
1 C. mushrooms, sliced
1 small onion, diced
1/2 green bell pepper, diced
1 red, orange or yellow bell pepper, diced
8 oz. steak, thinly sliced
1 tsp. steak seasoning
2 C. Swiss cheese
Salt and pepper
1 T. parsley for garnish
1/2 tsp. red pepper flakes for garnish
What to do:
Preheat oven to 450 degrees.
Cook your fries according to package directions.
Meanwhile, heat half the oil in a large cast iron skillet over medium-high heat. Add the mushrooms, onions, and bell peppers and season with salt and pepper. Cook for 10 minutes or until tender, stirring occasionally. Remove the veggies to a bowl and add the other tablespoon of oil to the skillet. Add the steak to the skillet and season with the steak seasoning, salt and pepper. Cook for 5-6 minutes, or until the steak is no longer pink. Transfer the steak to a bowl.
Once fries are done place half of the fries into the cast iron skillet used to cook the meat and vegetables. Top the fries with half of the steak, vegetables, and shredded cheese. Repeat with the remaining fries, steak, veggies, and cheese. Place back into the oven and bake for another 15 to 20 minutes until cheese is melted and everything has warmed through. Garnish with parsley and red pepper flakes. Serve immediately.
