Bacon Guacamole
Prep Time: 15 minutes
Serves: 4
Ingredients:
3 fully ripe avocados, mashed
1 tomato about 1/2 C., seeded and chopped
1/4 cup Zesty Italian Dressing or juice of one lime
1 jalapeño pepper, seeded, chopped
8 slices cooked bacon, crumbled; about 1/2 C. save some for garnish
A few dashes of Tabasco sauce (optional)
Chopped parsley or cilantro for garnish (optional)
What to do:
Combine all ingredients together. Spoon mixture into serving bowl, top with crumbled bacon and parsley or cilantro.
Christina’s Notes:
Serve with tortilla chips and/or cut-up fresh vegetables. Select avocados of uniform colors and free of cracks. Don’t buy avocados with dark, sunken spots in irregular patches or cracked surfaces. It is best to buy avocados when they are firm. Then, place them in a brown paper bag and let them ripen at room temperature. Avocados should be just ripe and should have a buttery consistency and a mild flavor.
