Ingredients:
3 pkg. (3.4 ounces each) instant coconut pudding mix
3 C. cold milk
1 tsp coconut extract (optional)
1 (8 ounces) frozen or homemade whipped topping, thawed
1 C. toasted coconut, divided, more if you wish
1 graham cracker crust (9 inches)
What to do:
In a large mixing bowl, whisk the pudding mixes, milk and extract for 2 minutes. Fold in whipped topping and 1/2 of the coconut. Pour into the crust. Sprinkle with the rest of the toasted coconut. Place in fridge for minimum of 2 hours before serving, or until set.
