Serves: 4-6
Ingredients:
1 (4.7 oz. or so) pkg. of roasted garlic and olive oil couscous
1/4 teaspoon black pepper
1 tablespoons lemon juice
3 tablespoons olive oil
2 large tomatoes, chopped
1 medium zucchini, halved and thinly sliced
1/2 C. olives, halved
1/8 cup fresh basil, cut into strips, I use the purple verity
1/2 cup green onions, sliced (usually about one stalk)
3/4 cup crumbled feta cheese
1 bottle of your favorite Italian dressing, or make your own, see below
What to do:
Prepare couscous according to package directions, except omit butter or olive oil and add black pepper with water.
In large bowl, combine prepared couscous, lemon juice and olive oil. Add tomatoes, zucchini, olives, basil and green onions. Chill 4 hours or overnight.
Stir in cheese and dressing just before serving.
Homemade Zesty Italian Dressing
Ingredients:
1 tbsp. garlic powder
1 tbsp. onion powder
1 tbsp. sugar
2 tbsp. dried oregano
1 tbsp. Italian seasoning
1 tsp. freshly ground black pepper
1/4 tsp. dried thyme
1 tbsp. dried parsley
1/2 tsp. red pepper flakes
2 tablespoon Italian Seasoning
1 tsp. salt

1/4 cup white/red wine vinegar
2/3 cup extra virgin olive oil
2 tbsp. water
2 tablespoon of the dry mix……shake, shake, shake…….
What to do:
Mix dry ingredients in a small sealable container. You will only be using 2 tablespoons of the dry mixture to make a portion of salad dressing. That way you will always have some on hand. So with that said, mix 2 tablespoons of the dry mixture with the vinegar, oil and water. Shake, Shake, Shake.
