Ingredients:
1 1/2 lb. ground beef
1 C. chopped onion
2 garlic cloves, minced
3 (3-oz.) packages ramen noodles, you won’t be using the season packets so it doesn’t matter what flavor you use.
2 C. beef broth plus one extra bouillon cube
1 C. ketchup
1/4 C. yellow mustard
1 medium size tomato, chopped (leave some for garnish)
1/4 C. sweet pickle relish or chopped dill pickle
2 C. shredded cheddar cheese
Green onions or lettuce for color and garnish
What to do:
Preheat oven to 350 degrees.
Coat a 9- x 13-inch baking dish with cooking spray and set aside.
In a large skillet over high heat, sauté beef, onion and garlic for 6-8 minutes, or until browned. Stir in beef broth and bring to a boil.
Add noodles and cook for 3 minutes, or until soft and water is almost gone. Remove from heat and stir in ketchup, mustard, relish, chopped tomato and 1 cup cheese.
Pour into baking dish, sprinkle with the other cup of cheese, and bake for 20-25 minutes, or until warmed through and the cheese is nice and golden brown. Garnish with chopped tomatoes, green onions or lettuce
