Ingredients:
3 T. butter
3 T. Olive oil
1-1/2 lb. potatoes, chopped
1/2 C. onion, chopped
1/4 C. minced fresh parsley
2 garlic cloves, minced
Salt and pepper to taste
Cayenne pepper (optional)
4-eggs
1/2 cup shredded extra-sharp cheddar cheese
What to do:
Preheat oven to 400 degrees.
In a 10-in. ovenproof skillet, heat butter and oil over medium-high heat. Add potatoes and onions; cook and stir until golden brown and tender, salt and pepper to taste. Stir in parsley and garlic. With back of a spoon, make four wells in the potato mixture; break two eggs into each well.
Bake 9-11 minutes or until the eggs are done to your liking. If you like your yolks firm then you will cook longer. Sprinkle with cheese, cayenne pepper and parsley. Bake 1 minute or put under broiler until cheese is melted.
