Ingredients:
1 1/2 C. all-purpose flour
1/2 tsp. baking soda
1/4 tsp. salt
1/2 C. butter, softened
1/2 C. granulated sugar
1/3 C. packed light-brown sugar
1 large egg
1, 1/2 tsp. vanilla or maple or rum extract
1 C. dried cherries, cranberries or raisins
1 C. flaked coconut
1 C. quick-cooking oats
1 C. white chocolate chips
What to do:
Preheat oven to 350 degrees.
Prepare 2 baking sheets with cooking spray or a Silpat.
In a medium-sized mixing bowl, combine flour, baking soda, and salt; set aside.
In a large bowl, whip together butter, granulated sugar, and brown sugar until creamy. Mix in the egg and vanilla extract. Add in slowly the flour mixture. Stir in cherries, coconut, oats, and white chocolate chips.
Drop dough, 2 T. each, on your prepared baking sheets; spacing cookies 2 inches apart. Bake in preheated oven 11 – 14 minutes until edges are lightly golden. Cool on baking sheet for 2 minutes then transfer to a wire rack to cool completely. Store in an airtight container.
