With just a few simple ingredients that you toss into a slow cooker, you get this delicious, full of flavor slow cooked Italian beef. These sandwiches are easy to make and can be served for any occasion or gathering!

Cook Time: 6-8 hours, depending on the size of roast
Serves: 5-7
Ingredients:
1, 4-5 lb. beef roast – an inexpensive cut is fine
2-4 T. Olive oil
2-4 tsp. instant bouillon or bouillon cubs, I use base
1 pkg. Italian Salad Dressing Mix
3 C. water
1 T. Italian seasoning
1 bay leaf
1 clove of garlic, minced
1 tsp. oregano
1/2 tsp. basil
1 good healthy splash of Worcestershire sauce
1 jar (16 oz. or so) of Italian sandwich mix (spicy giardiniera) or pepperoncini pepper, not drained
Sandwich rolls, french bread, sub buns etc.
Sliced provolone cheese
What to do:
In a medium size bowl add in your beef bouillon, Italian seasoning packet, water, seasonings, garlic and Worcestershire sauce, mix until combined or until bouillon is dissolved, set aside.
Salt and pepper your roast.
In a large skillet over medium high heat add the olive oil, when oil is hot add in your roast and caramelize on all sides, unless you can brown in your slow cooker. Once your meat is browned on all sides place in your slower cooker. Add your beef broth mixture to your pan to deglaze it, making sure to get all those bits and pieces loose, those are great flavor.
Once you have deglazed your pan pour the beef mixture into your slow cooker. Next pour your garden mix or peppers on top, juice and all. Cook on low for 8-10 hours or until it falls apart. After cooking, remove roast from slow cooker, shred and place back in juices. Serve on rolls or buns, topping with a slice of provolone. Melt cheese under oven broiler, if desired. Enjoy!!
