There are many variations of this wonderfully filling and comforting dish. In its simplest form, eggs are poached in a flavorful tomato sauce. Ingredients:
1 C. marinara sauce or make your own go to www.cooknwithmrsg.com
4 large eggs
1/4 cup milk, divided in two
1/4 cup shredded mozzarella cheese (or any cheese you desire), divided in two
2 tablespoons grated Parmesan, divided in two
Salt and pepper, to taste
1/4 C. parsley leaves, chopped
What to do:
Preheat oven to 425 degrees .
Lightly coat with nonstick spray, two ramekins.
Divide marinara sauce evenly into the ramekins. Top with eggs, milk, cheese and Parmesan and season with salt and pepper, to taste.
Place into oven and bake for about 15-20 minutes or until egg whites are cooked to your liking.
Serve immediately, garnished with parsley leaves and a good slice of artisan bread if desired.
