Ingredients:
1 pkg. (1 lb.) penne pasta
4 C. cubed cooked chicken breast or 1 lb. cooked ground lamb or beef
2-3 garlic gloves, minced
1 can (29 ounces or so) crushed tomatoes
1 can (14-1/2 ounces) diced tomatoes
1 pkg. (10 ounces) frozen chopped spinach, thawed and squeezed dry
1 can (6 oz. each or so) ripe olives, drained and sliced in half
1/4 C. chopped onion
1/2 of a green pepper, chopped
1 tsp. dried basil
1/2 tsp. dried thyme
1 tsp. dried oregano
1 C. shredded mozzarella cheese
1 C. crumbled feta cheese, divided
What to do:
Preheat oven to 400 degrees.
Cook pasta according to package directions; drain, set aside.
In a medium size fry pan cook your chicken or ground lamb (beef) until no longer pink and is cooked through.
Prepare a 9×13 baking dish coated with cooking spray. Combine all your ingredients including 1/2 C. of feta cheese and place in your baking dish; sprinkle with the rest of the cheeses and cook for 30-40 minutes or until nice and bubbly.
