Ingredients:
2 T. olive oil
1/2 C. diced onion
2 chopped garlic gloves
1 lb. package of Kielbasa, brats, sausage etc., cut into chunks
1 C. chicken broth or water
1 T. Italian seasoning
20 oz. package of refrigerated or frozen Tortellini
1 -10 oz. can (or so) of diced tomatoes and green chilies
1 -14.5 oz. can (or so) diced tomatoes
Handful of parsley
Salt & pepper to taste
1/2 C. heavy cream or half and half
2 C. shredded jack or cheddar cheeses
1/3 C. chopped chives
What to do:
In a medium size sauce pan add your olive oil and onions and garlic, cook until soft. Add your sausage and cook until browned and no pink is showing. Next, put in your broth, seasoning, tortellini, tomatoes, parsley, salt and pepper. Bring to a boil, make sure to stir often. Turn heat down to low, cover and simmer for about 20 minutes, or until pasta is done to your liking. Remove from heat and add the cream, 1 C. of the cheese, combine well. Cover and let stand for about 10 minutes. Garnish with the rest of the cheese and chives.
