Ingredients:
1/4 C. oil
1/2 T. crushed red pepper (optional and to taste)
1/8 tsp. salt
1/8 tsp. ground black pepper
1, 1/2 T. chopped garlic
2 chicken breast, cubed
1 C. marinara or spaghetti sauce; for homemade marinara go to www.cooknwithmrsg.com
2/3 C. Alfredo sauce
2 tsp. butter
1 C. frozen peas and carrots
1 lb. rigatoni pasta or what fits your fancy, cook according to package directions
Chopped parsley or basil for garnish
What to do:
In a medium sauce pan on medium to medium high heat, add oil, crushed red pepper, salt, black pepper and garlic and sauté just so the red pepper releases its flavor into the oil. Add the cubed chicken, cook until done.
Add marinara sauce first and then Alfred sauce and bring to a simmer. Cook until sauce thickens slightly, turn off heat, add butter, peas and carrots; mix into sauce.
Toss cooked pasta with the sauce, garnish with chopped parsley or basil.
