Ingredients:
1 C. pumpkin
1 C. evaporated milk
1 C. light brown sugar
3 eggs
2 tsp. pumpkin pie spice
1 tsp. cinnamon
1/2 tsp. salt
1 box yellow cake mix
1 C. (2 sticks) butter, melted
1 C. coarsely chopped pecans
1/2 C. toffee bits
What to do:
Preheat oven to 350 degrees.
Mix together the pumpkin, evaporated milk, sugar, eggs, salt, pumpkin pie spice and cinnamon in a bowl, mix well. Pour into a 9×13 pan.
Sprinkle the cake mix over top the pumpkin as evenly as possible.
Pour melted butter evenly over the top of the cake.
Sprinkle on the nuts & toffee pieces.
Bake for about 45-60 minutes, ovens will very. You want the edges to be browned and the center to be set.
Serve warm with a scoop of your favorite ice cream or homemade whipping cream.
