Serves: about 2-4 dozen depending on size
Ingredients:
1, 1/2 C. creamy or crunchy peanut butter
1/2 C. butter, softened
1 tsp. vanilla extract
1/2 tsp. salt
3 to 4 C. powdered sugar, this will depend on your peanut butter
2 C. semi-sweet chocolate chips
2 T. vegetable shortening
What to do:
In a large bowl, beat the first 5 ingredients until well blended and smooth. Roll into 1 inch balls (or a #60 cookie scoop) and refrigerate for at least 1 hour. This step will help the chocolate set much faster.
Place the chocolate and shortening in a deep bowl and microwave for 10-15 seconds at a time, stirring between intervals, until melted. Reheat as needed while coating peanut butter balls.
Dip the chilled peanut butter balls (I use a toothpick for this) three fourths of the way into the melted chocolate leaving top uncovered to resemble a buckeye. Remove excess chocolate and place on wax paper or a cookie sheet treated with cooking spray to set. Remove toothpick. Smooth over holes. Refrigerate until firm.
