Prep Time: 15 minutes
Cook Time: 45 minutes
Serves: 6-8
Ingredients:
1 package (1 lb.) spaghetti
1 lb. ground turkey or beef
1 small onion, chopped
3 garlic cloves, minced
1 jar (14 ounces) spaghetti sauce or homemade
1/2 tsp. salt
1/4 tsp. pepper
15 oz. ricotta cheese (one small container)
16 oz. sour cream (one small container)
1-1/2 C. (divided) shredded cheddar cheese and Monterey Jack cheese or any cheese you have on hand!
What to do:
Cook spaghetti according to package directions but only cook until done about half way (al dente); drain and set aside. In a large skillet, cook the beef, onion and garlic over medium heat until beef is no longer pink and onion transparent, breaking up beef into pieces. Stir in the spaghetti sauce and spaghetti, salt and pepper; bring to a boil. Reduce heat; simmer, uncovered, for 20 minutes, stirring occasionally.
In a separate bowl combine the ricotta cheese and sour cream.
In a greased casserole dish, layer a third of the spaghetti, than dollop the sour cream and ricotta cheese mixture. Keep layering, once done top with shredded cheese.
Bake, covered, at 350° for 30 to 45 minutes. Uncover; bake 5-10 minutes longer or until cheese is bubbly.
