Prep Time: 10 minutes
Cook Time: 20-30 minutes
Serves: 4
Ingredients:
1 C. uncooked rice
2 C. whole milk
2 T. of butter
2/3 C. sugar
1/4 tsp. salt
1 tsp. vanilla extract
1/4 tsp. cinnamon
1/2 C. raisins, optional
Cinnamon for garnish
What to do:
Cook your rice according to the instructions on the package.
In a large pot over medium to high heat add all the ingredients, except the rice. Once the mixture starts to boil lower the heat to simmer. Add your rice and stir every couple of minutes, paying close attention not to burn the pudding. Cook for about 25 to 30 minutes. If you think the heat is too high (because temperatures will very on stoves) please turn it down. Cook uncovered until the pudding is as thick as you like it, turn off the stove, add your raisins and cinnamon; let it cool.
