Cook Time: 60-70 minutes
Serves: about 6 thick slices for one loaf
Ingredients:
3/4 C. butter (room temperature)
1, 8 0z. Package of cream cheese
2 C. sugar
2 eggs
1/2 tsp. vanilla
3 C. flour
1 C. Greek yogurt
1/2 tsp. baking powder
1/2 tsp. soda
1/2 tsp. salt
1 banana
1 C. coconut flakes
1/2 C. pineapple (chunks or smashed is fine)
2 C. chopped pecans or walnuts, divided (some will be for the top)
What to do:
Heat oven to 350 degrees.
Butter (grease) and flour, two 4×8 bread pans.
In a medium bowl cream together butter, cream cheese and sugar until light and fluffy. Add eggs (one at a time) than add the bananas, yogurt and vanilla stir together
Then stir in the dry ingredients, making sure not to over mix, fold in the nuts, pineapple and coconut flakes. Add nuts on top if that catches your fancy.
These will make 2- 4×8 inch breads
Bake 350 degrees for about 60-75 until a wooden stick (toothpick) comes out clean when poked in the center of the bread.
