Serves: 6-8 depending on size of slices
Ingredients:
1 C. butter softened
2 C. sugar
2 eggs
1 T. vanilla
2 C. buttermilk (2 C. milk plus 2 T. vinegar or lemon juice if you don’t have buttermilk)
4 C. flour
2 tsp. baking soda
Cinnamon/sugar mixture
2/3 C. sugar
1/2 C. brown sugar
2 tsp. cinnamon
What to do:
Preheat oven to 350 degrees
Grease two loaf pans
In a small bowl mix together the cinnamon mixture.
In a medium size bowl cream together butter, 2 cups of sugar, vanilla and eggs. Add milk, flour, and baking soda, mix well but don’t over mix.
Put 1/4 of batter into greased loaf pans (1/4 in each pan). Put ¼ cinnamon mixtures on top and swirl with a butter knife or tooth pick. Add remaining batter to pans; sprinkle with the last of the cinnamon topping. Swirl again with a knife or tooth pick. Bake for 45-50 min. or until toothpick tester comes clean. Cool in pan for 20 minutes before removing.

For added crunch and flavor add ¼ cup oatmeal and ¼ cup chopped walnuts to the cinnamon mixture.
