Serves: 6-8 depending on bowl size
Ingredients:
1 lb. ground beef, turkey, chicken or a rotisserie chicken cut into bite size pieces
2 cans diced tomatoes with green chilies
2 can (30 oz. give or take) great northern bean or whichever you prefer
1 small box of Mexican or jalapeno processed cheese. (16 oz.) Or 2 C. shredded cheddar.
2 C. chicken stock
1 packet of white chili season packet
What to do:
In a large stock pot, brown your beef, turkey, or chicken, then drain the fat when done. Mix in diced tomatoes, great northern beans, chicken stock, and a white chili season packet. Once heated through add in the cheese until dissolved in chili. Enjoy with a loaf of crusty homemade bread.
Christina’s Notes:
Using a rotisserie chicken in this dish will not only give you great flavor but will save you time. This can also be spicy, especially for children, so on occasion I use plain diced tomatoes.
