Ingredients:
8 oz. mushrooms, sliced
2 medium onion, sliced
3 slices of bacon cooked and crumbled
2 T. olive oil
Salt and pepper
4 T. butter
4 slices bread of choice
1 C. give or take Gouda, shredded
What to do:
Coat the bottom of a sauté pan with olive oil, or a mixture of olive oil and butter. Heat the pan on medium high heat. Add the onion slices and mushrooms; stir to coat the onions and mushrooms with the oil. Spread the onions and mushrooms out evenly over the pan and let cook, stirring occasionally. After 10 minutes, sprinkle some salt over the onions and mushrooms, and if you want, you can add some sugar to help with the carmelization process.
Let cook for desire doneness, stirring every few minutes or until the onions are a rich, browned color then add your crumbled bacon.
In a skillet stove top, melt 4 tablespoons butter over medium heat.
While butter is melting, assemble sandwiches. In the melted butter place one sandwich down for one to two minutes until done, then gently flip it over to the other side, adding more butter if needed. Repeat with other sandwich, cook for about 2 minutes, until lightly browned or until cheese is melted and sandwich is browned to preference.
