Ingredients:
1-1/2 pounds venison steaks, cut into bite-sized pieces
3 T. cooking oil
1/2 tsp. garlic powder
1/2 tsp. onion powder
1/2 tsp. salt
1/2 tsp. pepper
1/2 C. bourbon
1 T. maple syrup
2 tsp. cider vinegar
3 T. butter
1/2 tsp. red pepper flakes
1 T. chopped fresh chives
What to do:
In a small bowl mix together garlic powder, onion powder, salt and pepper, pat steak pieces dry and season with this mixture. Heat 3 tablespoon oil in large skillet over medium-high heat until just smoking, add the steak pieces and cook until well seared all over, making sure it is still pink on the inside, about 5-7 minutes. Transfer to a platter and set aside.
Remove skillet from heat and add bourbon, maple syrup, and cider vinegar. Return to heat and cook until slightly thickened, approximately 3 minutes. Be sure to scrape up all those little bits and pieces (we call that flavor) while sauce is cooking. Remove from heat and whisk in butter and chili pepper flakes, season with salt and pepper to taste. Return venison to the skillet and let it marry with the wonderful sauce you just made. Sprinkle with chopped chives or green onions. Serve over egg noodles or rice….. Enjoy!
