Ricotta Mashed Potatoes, a quick and easy mashed potato recipe that is ready in less than 30 minutes! Creamy mashed potatoes flavored with butter and ricotta cheese. It’s an easy side dish that goes with absolutely everything!

Ingredients:
2 lb. potatoes
2 tsp. salt
15 oz. small container (about 2 cups) of ricotta cheese
1/2 C. whole milk, heavy cream or half and half
3 T. butter
1/2 tsp. ground black pepper
What to do:
Peel and cut potatoes into same size pieces, so they cook at the same time. Place potatoes and 1 teaspoon salt in a large pot and cover with water. Bring to a boil and continue to cook over medium heat until potatoes are tender, about 20 minutes give or take. Drain and return all to the pot. Mash the potatoes and stir in the ricotta, milk, butter, remaining salt, and pepper to mash and blend together. Serve in a large bowl with slabs of butter on top.
