Serves: 6-8
Ingredients:
8 ounces spaghetti noodles, or the pasta of your choice
6 tablespoons butter
3 large cloves garlic
8 ounces baby mushrooms, sliced, canned will also do
3 cups cooked duck, chopped
1/4 cup all purpose flour
2 cups chicken broth
1 cup heavy cream
1/2 cup sour cream
1/4 cup parsley
1/2 tsp. rosemary
1/2 teaspoon salt and pepper, more or less depending on taste
1 1/2 cup shredded Parmesan
What to do:
Preheat the oven to 350 degrees.
Coat a 9×13 baking dish with cooking spray.
Cook pasta according to the directions on the package. Melt 6 tablespoons of butter in a large skillet over medium high heat. Add the garlic and the mushrooms, cook for 3-5 minutes until browned, stirring occasionally. Whisk the flour into the melted butter and cook for 1 to 2 minutes; this will cook the flour taste out. Then slowly add the chicken broth, whisking to combine. Increase the heat to medium high and bring to a simmer. Cook for 2 minutes and then add the cream and sour cream mixing well. When the sauce begins to simmer again, reduce the heat to medium and stir in 1 cup of parmesan cheese, parsley, rosemary and salt and pepper, let it simmer on low, stirring constantly for 3-5 minutes. The sauce will thicken slightly as it cooks. Last but not least add your cooked duck. Place the pasta in your prepared baking dish and then spread the duck mixture over top of it. Pour the sauce over everything to coat it thoroughly, sprinkle the remainder of the parmesan cheese on top. Bake for 20 minutes uncovered, until the sauce is bubbling and golden brown.
Christina’s Notes:
The add-ins for this dish would be spinach, almonds, peas etc. Different kinds of mushrooms will also give lots of different levels of flavors. Don’t be afraid to use different kinds of pasta, I usually use what I have one hand. Fresh or canned mushrooms work just the same. I know this because I didn’t feel like going to the store one day when I made this and used the canned mushrooms that I had in my pantry. 🙂
