This classic Mexican recipe has seasoned ground beef or chicken, rolled up in a soft corn or flour tortilla and smothered in red sauce and melted cheese.

Cook Time: 30 -40 minutes

Ingredients:
2 tsp. oil
1 C. each chopped Onions and Green Peppers
2 cloves of Garlic, minced
2 lbs. chopped cooked Chicken (about two big chicken breasts) or cooked hamburger
1 pkg. of Cream Cheese
1 C. Mexican shredded cheese plus 1/2 C. to 1 C. extra for the top
10 Corn or flour tortillas (12 or 8 inches)

What to do:
Heat oven to 350*.
Heat oil in large skillet over medium heat. Add onions, peppers and garlic:
Cook and stir 5 to 6 minutes or until crisp-tender. Stir in chicken or beef, cream cheese and 1 C. shredded cheese, and ¼ cup enchilada sauce.
Spoon ¼ cup or so of the chicken mixture down center of tortilla: roll up. Place seam down in a 13 x 9-inch baking dish sprayed with cooking spray. Repeat with remaining tortillas and filling, cover with remaining sauce.
Bake 25 minutes uncovered or until done. The last 10 to 15 minutes add the extra cheese on top. Bake until the cheese is golden brown.
Christinas Notes:
When serving try these extra toppings for even more flavor, extra cheese, sour cream, avocado or even salsa. The sky is the limited with this dish.
Don’t have time to cook chicken, buy a rotisserie chicken. They are already seasoned, cooked and will save you a lot of time.
