Ingredients:
4-5 lb. rib roast
Olive oil
Dry Mix:
1 T. dried thyme leaf
1 T. onion powder
1 T. garlic powder
1 T. seasoned salt
1 T. black pepper
Au jus sauce:
1/4 C. red wine
1/4 C. beef broth
What to do:
Preheat your oven to a toasty 450 degrees Fahrenheit.
Grab a roasting pan and give it a good coat of cooking spray.
Now, place your beef fat-side up on a rack in the roasting pan.
In a small bowl, mix together the thyme, onion powder, garlic powder, salt, and pepper. This is your flavor boost, so make sure it’s all combined nicely.
Now, it’s time to give your roast some love. Drizzle some olive oil generously over the beef. And by generously, I mean a lot of oil. It’s going to make your roast oh-so-tender. Once you’ve done that, rub the spice mixture all over the beef. Use all of it—you don’t want to miss out on any of that flavor.
Pop that baby in the oven and let it roast for 20 minutes at 450 degrees. After that, reduce the heat to 300 degrees and continue cooking for another 1 to 1 1/2 hours. You’ll know it’s done when the meat thermometer registers 115°-120°F for rare or 125°-130°F for medium-rare. Remember, the internal temperature will rise a bit even after you take the roast out. Be sure to take it out 5 degrees before your desired temperature.
Once you’ve removed the beef from the oven, let it rest on a cutting board for about 15 minutes, tented with foil, of course. This will allow the juices to redistribute and make the meat even more delicious.
Christina’s Notes: If you prefer your prime rib more well-done, I’ve got you covered. Just whip up a quick au jus sauce. On the stovetop, over medium heat, add the red wine to your roasting pan. Then add the beef broth and whisk. Continue whisking until the pan is deglazed. It should take about 2 to 3 minutes. Drizzle that flavorful au jus over your prime rib and serve it immediately
