Serves: 4-5
Ingredients:
2 T. olive oil
1 lb. Kielbasa (or any sausage you prefer)
1 C. onion, finely chopped
2 cloves garlic, minced or 1/2 tsp. garlic powder
3 C. pasta, whatever kind of pasta your heart desires
1 can chopped tomatoes with chilies
2 C. milk
1 C. chicken stock
1, 1/2 C. shredded cheddar cheese
What to do:
On medium high heat and in a large skillet heat olive oil, add onions and sausage. Cook until onions are soft, and sausage is starting to brown, about 5-8 minutes. Add garlic, and cook for an additional minute.
Stir in pasta, tomatoes, milk, and chicken stock. Bring to a boil. Cover, reduce heat and cook for 10-12 minutes until pasta is tender. Take off heat and stir in cheese until well combined. The sauce will thicken as it sits about 5 minutes then serve.
