Ingredients:
Two chicken breasts
1 C. sun-dried tomato vinaigrette dressing, store bought or for homemade go to my link at www.cooknwithmrsg.com
1/2 C. chopped sundried tomatoes, with or without oil
1/2 C. chopped spinach, frozen (thawed) or fresh
1/4 C. sliced thin red onion
1/4 C. feta cheese, goat cheese or crumbled blue cheese
1/4 C. Monterey Jack cheese or mozzarella
What to do:
Cut your chicken breast in half like you would a hot dog bun but don’t cut all the way through. You need a cavity to layer all you goodies in. Place your chicken breast in a medium size bowl or a large zip lock bag. Pour your dressing in the cavities that you created and all around your chicken and make sure every bit is covered. Let this marinate for up to two hours turning your chicken once. Once your chicken is ready layer in your tomatoes, spinach, red onion and cheeses, you might have to use toothpicks to help keep everything in and closed. In a medium size pan on medium high heat sear the chicken on both sides then lower the heat and add the left over marinade and continue cooking on both sides until done, about 3-5 minutes per side. This time will depend on how thick your stuffed chicken breasts are. Serve over rice or with a nice side salad.
