Serves: 1 Cup
Ingredients:
1/3 C. white wine vinegar
1/4 C. extra-virgin olive oil
2 T. Dijon mustard
1 tsp. sugar (more to taste)
Salt and pepper to taste
1/4 C. lightly packed parsley, chopped
What to do:
In a blender or jar add vinegar, sugar, olive oil, Dijon mustard , parsley and salt and pepper and pulse or shake mixture until slightly thickened about 20 seconds longer.
Christina’s Notes:
The sugar is to balance out the vinegar, but honey works just as well.
