Prep Time: 10 minutes, rising time 1 hour 15 minutes
Cook Time: 30 minutes
Serves: 2 loaves
Ingredients:
1 pkg. (1/4 ounce) active dry yeast
2-1/4 C. warm water (110° to 115°)
3 T. sugar
1 T. salt
2 T. canola oil
6 to 6-1/4 C. all-purpose flour
What to do:
In a large mixing bowl, dissolve yeast in warm water and sugar. Let sit 5 minutes. Add the oil, salt and flour (starting with 6 cups of flour). Mix until everything is well combined. Stir in remaining flour if it’s too sticky (you might not have to) and form a soft dough ball.
Turn onto a floured surface; knead until smooth and elastic, about 8-10 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1-1/2 hours.
Punch the dough down, divide and form into 2 loaves. Place the dough in 2 greased bread pans. Cover and let rise till the top of the dough is an inch or two above the bread pans, about 30-45 minutes.
Bake at 375° for 30-35 minutes or until golden brown and bread sounds hollow when tapped. Remove from pans to wire racks to cool.
