Ingredients:
Turkey Filling
2 tsp. toasted sesame oil
8 oz. fresh mushrooms (any type will do), diced
Salt and pepper to taste
1 lb. ground turkey or turkey breast cut into bit size pieces
1 small clove garlic, minced or 1 tsp. prepared
1/2 tsp. powdered ginger
3 green onions, thinly sliced
6-8 oz. bean sprouts
8 oz. sliced bamboo shoots
Romaine Lettuce
Sesame seeds and more sliced green onions for garnish
Sriracha sauce for extra heat
Asian Sauce
1/4 C. low sodium soy sauce
2 T. hoi sin sauce
2 T. rice vinegar
2 tsp. Sriracha paste, more or less depending on how spicy you like it
1 teaspoon toasted sesame oil
What to do:
Heat a large skillet over medium high heat. Add two teaspoons of toasted sesame oil and the mushrooms, salt and pepper to taste and sauté until softened, about 3 minutes. Add the turkey, garlic, green onions and ginger, cook until cooked through, about 5 minutes. While the turkey is cooking whisk together all of the ingredients for the Asian sauce. Pour the sauce, bean sprouts and bamboo shoots over the turkey mixture and stir together until combined and until sauce has rendered slightly. Remove from the heat and scoop some of the filling into the lettuce leaves; garnish with sliced green onions and sesame seeds. Of course Sriracha sauce for extra heat.
