Ingredients:
1 lb chicken, cut into bit size pieces
2 C. flour to coat chicken
1/2 tsp. salt
1/2 tsp. pepper
1 T. oil for cooking chicken
1 tsp minced garlic
1/4 to 1/2 tsp red pepper flakes (depending on how spicy you like it)
1/4 c green onions sliced
1 T. rice wine vinegar
1½ T. soy sauce
1 T. water
5 T. orange juice
3 T. sugar or honey, more or less depending how sweet you like it
Zest of one orange
What to do:
Make sure your chicken bites are patted dry, in a container or large zip lock bag, put-in the flour, salt, and ground black pepper then mix well. Place the chicken inside the container and shake…shake….shake….making sure all chicken pieces are covered with the flour mixture. In a large skillet on medium high heat add your oil and chicken pieces. When cooked through, set aside. Add garlic, red pepper flakes, green onions, and rice vinegar to your pan, let this cook for about 1 minute, add in soy sauce, water, orange juice, sugar, orange zest and bring this to a boil. Once at a boil add your chicken and turn down to low and simmer until sauce thickens. Serve over rice with extra green onions for garnish.
