Ingredients:
2 T of sesame oil
2 T. of olive oil
4 C. of cabbage, sliced then and in long strip
1 pint mushrooms
1 C. of baby carrots (sliced)
1 onion cut into long strips
3 T. of soy sauce
1 C. of quinoa
1 C. of dried cherries (or raisins or dates if you prefer)
1 C. chopped pecans
1/2 C. chopped green onions
Salt and pepper to taste
What to do:
In a large pan, heat oils, add cabbage, mushrooms, baby carrots, onion and soy sauce and stir-fry or sauté until slightly tender. While vegetables are cooking, prepare quinoa as directed. Remove from heat when done. Add quinoa to the cabbage mixture; add 1 tablespoon soy sauce toss together and toss in dried cherries (or raisins or dates or all) and pecans last or just before you serve. Garnish with green onions. Enjoy!!!!
